Swedish or Turkish?

Surprisingly, the popular meatball dish known as a traditional Swedish delicacy originated in Turkey! I was surprised when I first learned that Swedish meatballs were not from Sweden originally! Formulated during the Ottoman Empire, “köfte” was the original name coined for the iconic dish and it later made its way across Europe and eventually into Sweden. Modified to fit local tastes and available ingredients, the name transitioned to “köttbullar” or Swedish Meatballs. Now known worldwide as the meatball dish that is famously paired with rich gravy, creamy mashed potatoes, cranberry sauce, and pickled cucumbers. Although it is seen all over the world, the history of the Swedish meatball is often forgotten.

Beef or Pork?

Which protein do you use when making Swedish meatballs? Originally, it was made from a mixture of ground lamb and spices, now it is more commonly seen being made with a multitude of proteins and ingredients. Common recipes suggest a mixture of pork and beef, although primarily beef recipes, which is my personal favourite, are also common in many Americanised recipes. Using a mixture of pork and beef proteins can help with the texture of the meatball, preventing a rubbery texture common with the all beef versions, and it also adds additional flavour. But, skipping the pork is a good alternative for certain religious beliefs, making the dish accessible to all families. I beleive any of these variations will be delicious with all the added spices, it is totally up to your preference.

All About the Gravy

Arguably, the best part of this dish, and the part that keeps me coming back for more, is the rich and savoury gravy, which is the perfect partner to the tender meatballs. To make the gravy, it starts with the drippings from cooking the meatballs, and then a roux made of butter and flour is added to create a smooth base for the sauce. Gradually, beef broth is added with some heavy cream, and it begins to resemble a mouth-watering consistency. The paired sides typically include a pickled cucumber salad and tart cranberry or lingonberry sauce that complement the dish beautifully, enhancing its flavour to create a rich sauce that represents the classic Scandinavian comfort food found all over the world today! I love to eat my Swedish meatballs with lots of gravy to coat the mashed potatoes as well and then cranberry sauce. I also tend to skip the pickles, opting for peas instead. I suggest you try out my method and let me know what you think!

Let's Talk Spices

Like any great dish, the flavour comes from layers of flavour to make up the final product. Swedish meatballs typically involve nutmeg and allspice, which gives it a nutty flavour, adding to the unique flavour profile. Oregano is also added, or what I typically prefer to use is freshly chopped parsley instead to give the meatballs a nice fresh flavour note. Of course, whatever you have in your pantry should suffice. The great thing about this dish is that it is very versatile, and ingredients can be swapped out to adjust to certain preferences. Let me know what spices you try out by sending me your preferred recipe on any of my social media.
